Easy Blackberry Pie With Crumb Topping

This easy blackberry pie with crumb topping is the best summer treat, and would be especially good served with a big scoop of vanilla ice cream.

INGREDIENTS - GF flour - Sugar - Salt - Butter - Ice water - Brown sugar - Frozen blackberries - Lemon juice

STEP 1: In a medium bowl, whisk the flour, sugar, and salt together. Add the cold butter. 

STEP 2:  Use a pastry blender to cut in the butter. Add ice water, one tablespoon at a time, until dough sticks together when pressed. 

STEP 3: Form into a round disc, wrap in plastic wrap, and chill for 2 hours.

STEP 4: To make the crumb topping, combine the flour, brown sugar, salt, and butter. Use your hands to make sure butter is fully incorporated. Chill while you finish the pie.

STEP 5: Roll the pie dough out to a 12 inch circle. Transfer to a glass pie plate. 

STEP 6: To make the filling, toss the blackberries with sugar and lemon juice. Add to crust.

STEP 7: Top with crumb topping and bake on 350ºF for 60-65 minutes.
