INGREDIENTS - Quinoa flakes - GF flour - Cinnamon - Baking soda - Salt - Butter - Brown sugar - Applesauce - Honey - Vanilla - Grated carrots

STEP 1: Whisk the quinoa, flour, baking soda, cinnamon, and salt together. Set aside.

STEP 2: Cream the butter with the brown sugar.

STEP 3: Add the applesauce, honey, and vanilla extract and mix until combined.

STEP 4: Add the dry ingredients to the wet ingredients and mix on low speed to combine. Fold in the grated carrots.

STEP 5: Cover and chill cookie dough in the refrigerator for at least 1 hour.

STEP 6: Scoop the dough into balls and place on the baking sheet, about 2 inches apart. Bake for 16-18 minutes.
