This delicious Easter egg cheesecake is such a fun dessert! It's made with a graham cracker crust and a rich and luscious cheesecake filling that's packed with mini eggs.
- Graham crackers
- Brown sugar
- Cream cheese
- Sweetened condensed milk
- Sour cream
- Vanilla extract
- Cadbury mini eggs
STEP 1: Combine the graham cracker crumbs, brown sugar, and melted butter. Transfer to a greased springform pan and pack in tightly. Chill the crust while you make the filling.
STEP 2: Beat the cream cheese until smooth and creamy, about 2 minutes.
STEP 3: Add the condensed milk, sour cream, and vanilla and continue to beat until smooth.
STEP 4: Fold in the mini eggs. Transfer the filling to the crust and bake on 300ºF for 45-50 minutes.
STEP 5: Cool completely, then chill in the refrigerator for 4-6 hours.
STEP 6: Top with additional mini eggs or whipped cream before serving.
