These gluten free pancakes from scratch are such a quick and easy treat for breakfast. They're soft and fluffy, with just a hint of sweet vanilla flavor.
- GF Flour
- Baking powder
STEP 1: In a medium bowl, whisk the flour, sugar, baking powder, and salt together.
STEP 2: Add the milk, oil, and vanilla. Mix until just combined. Some lumps are OK.
STEP 3: Allow the batter to sit for at least 15 minutes. The batter should thicken.
STEP 4: Heat a greased griddle or skillet over medium heat. Drop ¼ cup of batter onto griddle and cook until the sides start to bubble, about 1 minute, before flipping.
- Use a scale to weigh the flour to ensure accuracy.
- Do NOT over-mix the batter.
- Flip the pancakes when the edges start to bubble and appear set.
