Gluten Free Coconut Cake

This is hands down the best gluten free coconut cake! This coconut pound cake is super moist thanks to the buttermilk, and beyond easy to make.
- GF flour
- Baking powder
- Greek yogurt
- Unsweetened coconut
- Powdered sugar
STEP 1: In a medium bowl, whisk the flour, baking powder, and salt together. Set aside.
STEP 2: Using a stand mixer fitted with the paddle attachment, cream the butter with the sugar.
STEP 3: Add the Greek yogurt and vanilla and beat to combine.
STEP 4: Add the dry ingredients in thirds, alternating with the buttermilk and beating briefly after each addition. Fold in the coconut.
STEP 5: Transfer to a greased loaf pan and bake on 350ºF for 60-65 minutes. Cool completely before glazing.
STEP 6: To make the glaze, add the buttermilk to the powdered sugar, one tablespoon at a time, until desired consistency is achieved.
