Gluten Free Lemon Poppy Seed Cake

INGREDIENTS - GF flour - Baking soda - Baking powder - Salt - Vegetable oil - Sugar - Greek yogurt - Milk - Lemon juice - Lemon zest - Poppy seeds - Powdered sugar

STEP 1: Mix the flour, baking soda, baking powder, and salt together.

STEP 2:  In a separate, larger bowl, mix the oil with the sugar until combined. 

STEP 3: Stir in the yogurt, milk, lemon juice, and lemon zest.

STEP 4: Add the dry ingredients to the wet ingredients and mix to combine. Stir in the poppy seeds.

STEP 5: Pour the batter into prepared loaf pan and bake 30-35 minutes. Cool before glazing.

STEP 6: To make the glaze, mix the powdered sugar with the milk until fully combined.
