- GF flour
- Cocoa powder
- Baking powder
- Baking soda
- Vegetable oil
- Eggs or egg replacer
- Food coloring
- Cream cheese
- Powdered sugar
STEP 1: Preheat oven to 350°F. Line a muffin tin with cupcake liners and set aside.
STEP 2: Beat the butter, oil, and sugar. Add the egg or egg replacer and vanilla.
STEP 3: Add the dry ingredients in thirds, alternating with the buttermilk. Add the red food coloring.
STEP 4: Spoon batter into the cupcake liners. Bake for 18-20 minutes.
STEP 5: To make the frosting, beat the cream cheese and the butter. Add powdered sugar and a pinch of salt and mix.
