Gluten Free Vanilla Cupcakes

These easy gluten free vanilla cupcakes are moist and pillowy soft without being cloyingly sweet.

INGREDIENTS - GF flour - Baking powder - Salt - Butter - Oil - Sugar - Egg replacer or eggs - Vanilla - Milk - Powdered sugar - Heavy cream

STEP 1: Whisk the flour, baking powder, and salt together.

STEP 2: Beat the butter, oil, and sugar. 

STEP 3: Add the egg/egg replacer and vanilla extract. 

STEP 4: Add in the dry ingredients in thirds, alternating with the milk and making sure to start and end with dry ingredients.

STEP 5: Spoon batter into the cupcake liners, a little over halfway full. Bake for 18-20 minutes and cool completely before frosting.

STEP 6: To make the frosting, beat butter until light and creamy. Add powdered sugar and continue to mix. Add heavy cream, one tablespoon at a time.
