This millionaire's cheesecake is so rich, creamy, and full of caramel and chocolate flavor! The gluten free shortbread crust balances everything out perfectly.
- Cream cheese
- Condensed milk
- Caramel sauce
- Sour cream
- Heavy cream
- Chocolate chips
STEP 1: To make the shortbread crust, cream the butter with the sugar until smooth.
STEP 2: Add the flour and salt and mix on low speed until combined. Transfer the dough to a greased springform pan and bake for 15 minutes, then set aside to cool completely.
STEP 3: To make the filling, beat the cream cheese until smooth.
STEP 4: Add the sweetened condensed milk, caramel sauce, and sour cream and beat. Transfer into the crust and bake for 30-35 minutes. Cool completely, then chill for at least 2 hours.
STEP 5: To make the ganache, heat the heavy cream in the microwave until warm but not scalding (about 45 seconds).
STEP 6: Pour warm cream over chocolate chips and allow it to sit for 2 minutes, then stir until smooth. Allow the ganache to cool slightly, then spread over cheesecake.
