Raspberry Thumbprint Cookies

These raspberry thumbprint cookies are SO soft and delicious. The sweet raspberry jam paired with the tangy cream cheese filling is just a winning combination.

INGREDIENTS - Butter - Sugar - Egg or egg replacer - Vanilla - Flour - Baking powder - Salt - Cream cheese - Powdered sugar - Greek yogurt - Raspberry jam

STEP 1: Cream the butter with the sugar for 2-3 minutes, until smooth.

STEP 2: Add the egg or egg replacer and vanilla extract and beat to combine.

STEP 3: Add the flour, baking powder, and salt and mix on low speed until soft dough forms. Cover and chill in the refrigerator for at least 1 hour.

STEP 4: In a small bowl, mix the cream cheese, powdered sugar, and Greek yogurt until smooth.

STEP 5: Scoop out dough and roll into a ball, then flatten into a round disc. Use your thumb to press an indentation into the center. Scoop ½ tsp of filling into each cookie. Bake for 12-14 minutes.

STEP 6: Immediately after removing cookies from the oven, scoop a dollop of raspberry jam onto the centers, right on top of the cream cheese filling.
