This strawberry crunch cake tastes just like the nostalgic ice cream bars with an easy strawberry crunch topping, classic buttercream frosting, and roasted strawberry filling.
- Baking powder
- Baking soda
- Greek yogurt
- Rice cereal
- Freeze dried berries
- Powdered sugar
- Heavy cream
STEP 1: Whisk the flour, baking powder, baking soda, and salt together.
STEP 2: Cream the butter with the sugar until smooth.
STEP 3: Add the yogurt, buttermilk, and vanilla extract. Add the dry ingredients and mix on low speed. Divide the batter evenly between the pans. Bake for 28-30 minutes.
STEP 4: Make the filling. In a glass baking dish, combine the strawberries and sugar. Bake for 20 minutes.
STEP 5: Make the crunch topping. Crush the rice cereal and freeze dried strawberries into crumbs. Transfer to a small bowl and add the melted butter.
STEP 6: Make the frosting by beating the butter first, then adding powdered sugar and cream. Assemble the cake layers with the filling spread evenly in between and cover the cake with frosting and crunch topping.
