    Candy Corn Cupcakes - Festive & Easy Halloween Cupcakes

    These candy corn cupcakes are fun, festive, and surprisingly easy to make! With rich chocolate cupcakes topped with colorful candy corn-inspired buttercream, they're the perfect Halloween cupcakes for parties, classroom celebrations, or baking with kids.

    I always find that cupcakes are the perfect easy treat for every holiday or occasion. If you find a good base cupcake recipe that you like, all you have to do is switch up the frosting and you're set!

    I thought about all of the different fun ways I could have decorated these chocolate cupcakes (and trust me, there are a LOT), and finally settled on a candy corn inspired swirl. There's not actually any candy corn in this buttercream frosting. But I promise it's delicious.

    Why These Cupcakes Make The Best Easy Halloween Treat

    • The perfect Halloween party dessert. These festive cupcakes always stand out on a Halloween dessert table.
    • Rich, moist chocolate cupcakes. The chocolate base pairs perfectly with the sweet buttercream frosting.
    • Easy candy corn decorating. No advanced decorating skills required-just pipe three simple colors of frosting.
    • Fun to make with kids. Coloring and piping the frosting is one of my favorite parts of this recipe.
    • Easy to customize. Change the frosting colors or decorations to fit any Halloween party theme.

    Ingredient Notes and Substitutions

    Flour

    My favorite gluten free flour is Bob's Red Mill 1 to 1 flour. If you are using a different blend, you need to ensure that it contains xanthan gum. And because this is a cup for cup flour, you can absolutely use all-purpose flour if you are not following a gluten free diet.

    Cocoa powder

    Natural unsweetened cocoa powder gives these cupcakes their rich chocolate flavor. I don't recommend substituting Dutch-process cocoa powder because it reacts differently with the baking soda and may affect the rise and texture.

    Oil

    Using a combination of butter and oil gives you the best of both worlds. Butter adds flavor, while oil helps keep the cupcakes soft and moist for days.

    Eggs

    I tested this recipe using Bob's Red Mill Egg Replacer, which creates soft, fluffy cupcakes without sacrificing texture. If you don't need the recipe to be egg-free, you can substitute 2 large eggs instead.

    Milk

    You should be able to use any milk you like here, including non-dairy milk.

    Heavy cream

    Heavy cream creates a richer, creamier buttercream frosting, but whole milk will also work if that's what you have on hand. You may need to slightly adjust the amount depending on your desired consistency.

    Food coloring

    Gel food coloring creates bold Halloween colors without thinning the frosting. Liquid food coloring can make buttercream runny, so I always recommend using gel colors whenever possible. This is my favorite set.

    Why This Recipe Works

    • Oil and butter create moist cupcakes.

    • Three simple frosting colors recreate candy corn without actual candy.

    How To Make Candy Corn Cupcakes (Step-by-Step)

    STEP ONE: To make my easy candy corn cupcakes, we'll start by whisking the flour, cocoa powder, baking powder, baking soda, and salt together.

    STEP TWO: Set that aside and move on to your wet ingredients: beat the sugar, butter, and oil.

    STEP THREE: Add in the egg replacer (or eggs) and vanilla and continue to mix.

    STEP FOUR: Add the dry ingredients in thirds, alternating with the milk. Start and end with the dry mix and keep beating to incorporate after each addition.

    STEP FIVE: Spoon the batter into your cupcake liners (fill them up almost all the way), and bake on 350ยบF for about 18 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. The tops should spring back lightly when touched. Be careful not to overbake, as that can dry out the cupcakes. Allow the cupcakes to cool COMPLETELY before attempting to frost.

    STEP SIX: For the frosting, we're actually using cold butter rather than room temperature. Cut your butter into cubes, then beat using a mixer for about 5 minutes, until it's nice and creamy and lighter in color.

    STEP SEVEN: Add in the powdered sugar and beat for another 3-4 minutes, then add heavy cream, one tablespoon at a time.

    STEP EIGHT: Finally, separate your frosting into thirds. Use food coloring to color one third yellow, another third orange, and leave the last third white. Pipe onto each individual cupcake, starting with a swirl of yellow, then orange, then white frosting.

    That's all there is to it! Happy Halloween!

    Expert Tips

    • As always, my top baking tip is to use a scale to weigh your flour. This is the best way to ensure accuracy! Too much or too little flour will affect the end result. We're using 148 grams of flour in this recipe.
    • I like to use a large cookie scoop (about 3 tablespoons) to fill my cupcake liners. You want to fill them up a little more than halfway.
    • Cool the cupcakes completely before frosting. Even slightly warm cupcakes can cause the buttercream to melt. Let them cool completely before piping the frosting for the cleanest candy corn design.
    • When it comes to making the frosting, it really is important to take some time to beat the butter. This will help make your frosting fluffy and creamy.
    • Speaking of frosting, you may have to eyeball the cream and, depending on your consistency, might need more or less than what I've specified. Just use your best judgment and make sure to add it in gradually. If you accidentally thin it out too much, add a bit more powdered sugar, one tablespoon at a time.
    • Be sure to use separate piping bags. If you're new to decorating, it's easier to pipe each frosting color separately rather than trying to combine them into one.

    While I love the classic candy corn look, there are plenty of fun ways to customize these cupcakes for Halloween.

    Do I need real candy corn to make candy corn cupcakes?

    Nope! The design is inspired by candy corn colors only. These cupcakes get their look from the frosting layers, so there's no actual candy corn in the batter.

    Can I make these Halloween cupcakes dairy free?

    Yes! You should be able to use non-dairy butter and milk to make these cupcakes dairy free.

    Do I need to refrigerate frosted cupcakes?

    No, you can store the frosted cupcakes in an airtight container at room temperature for the first 2 days. After that, I recommend moving into the refrigerator.

    Can I make these cupcakes ahead of time for a Halloween party?

    Yes! Bake the cupcakes a day ahead, then frost them the day of your party for the freshest look. They'll hold up well in an airtight container at room temperature for about 2 days.

    Can I make the frosting ahead of time?

    Yes. Store the buttercream in an airtight container in the refrigerator for up to 3 days. Let it come to room temperature and re-whip it before decorating the cupcakes.

    Can I freeze these cupcakes?

    Yes! Freeze the unfrosted cupcakes in an airtight container for up to 3 months. Thaw at room temperature, then frost and decorate before serving.

    Do I need a piping tip?

    No. A piping tip creates the classic candy corn swirl, but you can also spread the frosting with an offset spatula or butter knife if you prefer.

    Ingredients

    Chocolate Cupcakes

    • 1 cup (148g) flour* (I use Bob's Red Mill 1 to 1)
    • ยฝ cup (42g) unsweetened cocoa powder
    • ยฝ teaspoon baking powder
    • ยฝ teaspoon baking soda
    • ยผ teaspoon fine salt
    • โ…” cup (134g) sugar
    • 4 tablespoons (57g) unsalted butter room temperature
    • ยผ cup (60ml) vegetable or canola oil
    • 2 eggs*
    • ยฝ teaspoon vanilla extract
    • ยฝ cup (120ml) milk of choice room temperature

    Buttercream frosting

    • 1 ยฝ cups (340g) unsalted butter cold, cubed
    • 4 ยฝ cups (540g) powdered sugar sifted
    • 2-4 tablespoons heavy cream
    • orange and yellow gel food coloring

    Instructions

    • Preheat the oven to 350ยฐF. Line a muffin tin with cupcake liners.
    • Whisk the flour, cocoa powder, baking powder, baking soda, and salt together in a medium bowl until combined. Set aside.

    • Using a hand mixer or a stand mixer fitted with the paddle attachment, beat the sugar, butter, and oil until smooth. Add the eggs and vanilla extract and beat to combine.

    • Add the dry ingredients in thirds, alternating with the milk and making sure to start and end with dry ingredients. Beat between each addition to incorporate.

    • Spoon the batter into the cupcake liners, a little over halfway full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Cool completely before frosting.

    Buttercream Frosting

    • To make the frosting, use a hand mixer or a stand mixer fitted with the paddle attachment to beat the butter until smooth and creamy, about 4-5 minutes. Add the powdered sugar and beat until combined, another 3-4 minutes. Add the heavy cream, one tablespoon at a time, until you have the desired consistency.

    • Separate the frosting into thirds. Leave one third white and use gel food coloring to tint the second portion yellow and the third portion orange. Transfer to three separate piping bags and pipe a swirl of yellow, followed by a slightly smaller swirl of orange on top, and an even smaller swirl of white on top of that. Repeat with all cupcakes.

    Notes

    • For eggless cupcakes, I recommend Bob's Red Mill Egg Replacer. Be sure to follow the instructions on the package. You'll need 2 tablespoons of the egg replacer mixed with 4 tablespoons of water.ย 
    • If you are not looking to make these cupcakes gluten free, feel free to use AP flour.ย
